Nori Veggie Wraps

There’s nothing like a fresh veggie wrap in the summer! I love these wraps for a quick lunch, an appetizer, or add a protein for a easy weeknight dinner.

Ingredients-

  • Nori Sheets

  • Thinly sliced vegetables of choice, I used cucumber, carrot, bell pepper and a crunchy broccoli slaw

  • Spinach or romaine

  • Kimchi

  • Avocado

  • Hemp hearts

  • Coconut Aminos for dipping

Method-

Lay out nori sheets, add your greens, avocado, kimchi, thinly sliced. vegetables, hemp hearts, and toppings of choice. Wrap tightly and slice into two halves.
Enjoy with coconut aminos or create a peanut sauce!

Peanut Sauce Recipe

  • 6 tbsp peanut butter (unsweetened)

  • 2 tbsp lime juice

  • 1 tbsp freshly grated ginger

  • 1/2 tbsp maple syrup (optional)

  • 1 tbsp coconut aminos

  • Dash of salt, pepper, and paprika

  • Whisk together, adding water if thinner consistency is desired.

Makes 1 jar.
