GF/DF Snickers Bites

These are absolutely INCREDIBLE for meeting that little afternoon snack need. Not only are they gluten and dairy free, but they’re also high in protein, have no refined sugar, and are perfect for meal prep.

Ingredients

  • 1 cup almond flour

  • 1 scoop protein powder (RItual is my favorite for this)

  • 1/4 cup maple syrup

  • dash of salt, dash of vanilla extract

  • 5 pitted dates

  • 4 tbsp peanut butter

  • dark chocolate chips, melted (I use Lily’s Semi Sweet Baking Chips)

Method

In a bowl, combine almond flour, protein, maple syrup, salt, and vanilla. Add a splash of almond milk if the consistency is too dry.

Roll into balls and flatten slightly.

Then add about 1 tsp of peanut butter to each bite, then top with 1/2 a date.

Drizzle with melted chocolate and store in an airtight container in the freezer.
