Easy Burrito Bowl
These meals can come together in half an hour, meeting both your nutritional needs and fitting into your schedule! Here’s how I build my burrito bowl.
I have listed out an amount that gives leftovers for the next day as well, but you can adjust measurements to suit your needs.
Ingredients
1 lb organic grass fed beef
1 cup organic long grain white rice
3 bell peppers, 1/2 an onion, 4 bella mushrooms, a few cherry tomatos
greens for base, cilantro for topping, limes for drizzle
salsa
Avocados
Siete cassava chips if desired
Method
In a pot, add 1 cup of rice and 2 cups of water. Cover, let come to a boil and cook according to package.
In a skillet, soften diced onion and 2 cloves of garlic. Once softened, remove from pan and add in beef. Once beef is cooked, I like to drain the fat off of it, and return it to the pan with the onions and garlic. Then add in seasoning. I do my own mixture of salt, pepper, garlic, cumin, and chili powder, but you can use the taco mix from Siete for a quick and easy mix that has clean ingredients.
While this is cooking, I slice my veggies and air fry or roast with a drizzle of avocado oil until soft and slightly crispy.
Homemade Guac-
Depending on how many you are serving, my homemade guac is SO simple. Add mashed avocado to a bowl, adding in lime juice, salt, pepper, garlic, and a bit of cayenne if you like heat. Add 2 tbsp of salsa and finely chopped cilantro and you have incredible guac for your bowl.
Once all ingredients are cooked I add a base of greens to a bow, add in beef, rice, veggies, and I top with a few tomatoes, a spoonful of guac, and some cilantro.
Your easy, gf/df, high protein and balanced weeknight meal is complete!
