Bruschetta Salad

Summer vegetables- what could be better? Fresh produce doesn’t need a whole lot as it’s already bursting on it’s own. I love creating a simple salad like this on summer days when I can’t be bothered to cook.

Ingredients-

  • Fresh cherry tomatoes, halved

  • Fresh cucumbers

  • Protein of choice (I used tempeh but I also love using grilled chicken on this dish

  • Crumbled goats cheese or feta

  • Fresh basil

  • 2 tbsp balsamic vinegar

  • Dash of olive oil

  • Hummus or avocado

Method

Start by adding to a small bowl your chopped cucumbers and tomatoes. Add chopped basil, 1 tbsp of balsamic vinegar, salt, pepper, and a bit of garlic powder. Mix until vegetables are covered in herbs and vinegar. To a bed of fresh greens, dash a bit of balsamic and olive oil, then add cooked protein of choice, top with vegetables, hummus or avocado, and crumbled cheese.

I also added a crumbled Ella’s Flats seed crackers for an extra crunch. Serve and enjoy!
