Creamy Mushroom Pasta

This recipe is sure to be a crowd pleaser, and also contains a secret ingredient that makes this recipe high protein!

Recipe 

Creamy Mushroom Pasta Recipe 

-4oz tofu

-2 tbsp nutritional yeast

-1 tbsp lemon juice

-1/2 tsp salt, cracked black pepper to taste

-1 garlic clove, crushed

-1/2 yellow onion, divided

-1/4 cup Kiki Unsweetened Plant Milk

-4-5 large mushrooms 

-pasta of choice 

1.Dice 1/2 of the onion and crush garlic, then saute until translucent with 1/2 tbsp olive oil, set aside. 

2.In a food processor or blender, add in tofu, nutritional yeast, salt, pepper, lemon juice, and a splash of unsweetened plant based milk. Add in sautéed onion and garlic and blend until smooth and creamy, adding a bit more milk as needed. 

3.Cook pasta, and saute mushrooms and onion while pasta is boiling. 

4.Add creamy sauce to the sautéed mushroom and onion, then after draining pasta, add to the creamy mixture. 

5.Top with parsley and enjoy!
