Cannellini Bean + Beet Salad

Recently, I have been obsessed with topping my salads with beets.

Not only are they a colorful addition to any dish, beets are a powerhouse, full of nutrients such as iron, potassium, fiber, vitamin C, folate, and magnesium.

Here’s my favorite way to incorporate them into my diet.

Cannellini Bean + Beet Salad

Ingredients-

  • Salad greens of choice (Kale, Arugula, Spinach, Spring Mix)

  • Pre cooked beets (I like the LoveBeets brand)

  • Thinly sliced cucumber

  • 1/2 cup Cannellini beans

  • 1/2 an avocado

  • Shredded carrot

  • Sprouts

  • Semon juice, salt, pepper

Method- Fill a bowl with your choice of leafy greens, then top with shredded carrot, then the beans, cucumber, beets, and avocado. Squeeze half a lemon over the salad with a dash of salt and pepper. Top with sprouts, a drizzle of olive oil, or a spoonful of hummus and enjoy!
