Quinoa Kimchi Stir Fry

Kimchi: bursting with flavor and nutrients!

This traditional Korean dish is a powerhouse of beneficial vitamins, minerals, and probiotics. Packed with cabbage, radishes, and spices, kimchi promotes digestion, boosts the immune system, and supports gut health. I love incorporating probiotic rich foods into my diet and one of my favorite recipes is this easy kimchi stir fry.

Ingredients:

  • 1 cup quinoa, cooked and cooled

  • 1 zucchini

  • 1/4 onion, finely chopped

  • 1/2 cup broccoli slaw or cabbage mix

  • 1/4 cup kimchi

  • 1/2 avocado

  • 1-2 tbsp coconut aminos, grated ginger, salt, pepper, garlic

    Method:

  • In a small skillet, cook onion and zucchini until tender, add in slaw or cabbage mix and kimchi, stir fry together, adding coconut aminos and seasonings to taste. Add in cooked quinoa, mix until quinoa is warm and vegetables are cooked through.

    Add to a bowl, topping with avocado and enjoy! Add in a protein source of choice for a full meal.
