Fluffy Banana Pancakes
When I first tested this recipe, I was skeptical. Most protein pancake recipes I’ve made in the past have turned out pretty dense and… protein powder tasting. But this recipe was a game changer. Light, fluffy, full of a delicious vanilla flavor- you never would guess there was protein powder in them!
That being said- I think it truly depends on what type of protein you use. I love Ritual vanilla protein for any recipes or cooking as it really has a light fluffy texture and does not taste chalky or dense at all.
Ingredients-
1 ripe banana
1 scoop ritual vanilla protein
1 egg, separated
1 tsp baking soda
1 tsp vanilla extract
dash of salt
almond butter, fresh fruit, cinnamon to top
Method-
In a bowl, whisk egg whites until fluffy. Mash banana with a fork until smooth, then add to the egg white mixture, gently folding until combined. Add in egg yolk and protein powder, folding until combined. Add in baking soda, vanilla, salt, and a dash of cinnamon if desired. Mix together.
Heat a nonstick skillet with a small amount of coconut oil. Add in batter one medium sized pancake at a time. Cook 2-3 minutes, then flip and cook until golden.
Top with fresh fruit and almond butter- Enjoy!
