Buffalo Chickpea Lettuce Wraps

These buffalo chickpea wraps are super quick, easy and delicious when you’re in a rush, or need to prep meals for the week ahead!

Ingredients

  • 1/2 cup chickpeas, drained and rinsed

  • 1/4 red onion, finely diced

  • 4 cherry tomatoes, diced

  • bunch of cilantro, minced

  • 2 tbsp primal kitchen buffalo sauce

  • butter lettuce leaves

  • sprouts, avocado, or hummus to top (optional)

Mix together chickpeas, vegetables and buffalo sauce. Add to a salad, butter lettuce leaves, or rice crackers, top with sprouts, avocado or hummus and enjoy!
